Press tofu for 10–15 minutes to remove excess moisture. Cut into bite-size cubes and set aside.
Place asparagus and bell peppers in the bottom tray of the air fryer. Lightly spray with oil, then season with salt, black pepper, and Herbes de Provence.
Insert the rack. Arrange tofu evenly on the rack above the vegetables. Lightly spray tofu with oil, then season with salt, black pepper, and Herbes de Provence.
Air fry for 10-12 minutes, flipping the tofu halfway through, until tofu is golden-brown and vegetables are tender with light char.
