Drain the tofu and press to remove excess water. Cut into cubes.
Mist tofu cubes with oil. Add to an air fryer, set the temperature to 375 F. Cook for 7-10 minutes. Shake the basket and cook for another 5 minutes until crisp. Set aside.
If you don’t have an air fryer, you can cook in a non-stick skillet. Heat a little oil over medium heat. Add the tofu cubes and cook until golden and crispy on all sides, about 5-7 minutes. Set aside.
Prepare the Slaw
In a large bowl, combine the shredded coleslaw mix, shredded carrots, thinly sliced watermelon radishes, cilantro and scallions.
Add the Tofu and Crunch
Gently fold in the cooked tofu cubes. Then, add your choice of crunchy ingredients. Toss to combine.
Dress the Slaw
Drizzle the Watcharee Thai Peanut Sauce over the slaw mixture. Toss everything together until evenly coated.
