Ingredients
- ¾ cup Watcharee’s Thai Peanut Sauce
- 8–10 lettuce leaves
- 2 cups microgreens
- 4–5 sprigs Thai basil
- 4–5 sprigs fresh mint
- 1 medium carrot, shredded
- 6 Vietnamese rice paper wrappers
- Leftover turkey meat, sliced
Directions
- Place a sheet of rice paper on a flat surface. Lightly sprinkle with water and let it soften for a few seconds.
- Lay 1–2 lettuce leaves in the center of the softened rice paper.
- Add a small handful of microgreens, Thai basil, and mint.
- Add sliced leftover turkey on top of the greens.
- Fold the bottom edge of the wrapper upward, then fold in the sides, and roll tightly away from you to seal.
- Repeat with remaining wrappers and fillings.
- Serve with WATCHAREE’S Thai Peanut Sauce for dipping.
