Press the tofu to remove excess moisture and cube into bite-sized pieces. Lightly mist a pan with oil and sauté the tofu over medium heat until golden and crispy, about 7-10 minutes. You can also mist tofu cubes with oil and cook in air fryer for 7-10 minutes. Shake the basket halfway through to crisp all sides of tofu cubes. Set aside.
Assemble the Bowl
In a large bowl, add the cooked noodles, cooked edamame, broccoli slaw, shredded purple cabbage, grated carrots, and chopped kale. Drizzle Watcharee's Thai Peanut Sauce over the top and toss to combine.
