Asian Noodle Salad with Thai Peanut Sauce

Ingredients
- ½ cup Watcharee's Thai Peanut Sauce
- 1 cup cooked noodles
- ½ cup cooked edamame
- 1 package extra firm tofu (8 oz), cubed
- ½ cup broccoli slaw
- ½ cup grated carrots (we love organic shredded rainbow carrots)
- ½ cup microgreens
- ½ cup purple cabbage, shredded
- 1 cup kale, chopped
- 4-5 stems cilantro, chopped
- 4-5 scallions, chopped
- ¼ cup roasted unsalted peanuts or crunchy seeds and nuts for topping
- 1 tbs roasted sesame seeds
- Oil mister (for cooking tofu)
Directions
- Prepare the TofuPress the tofu to remove excess moisture and cube into bite-sized pieces. 
- Lightly mist a pan with oil and sauté the tofu over medium heat until golden and crispy, about 7-10 minutes. 
- You can also mist tofu cubes with oil and cook in air fryer for 7-10 minutes. 
- Shake the basket halfway through to crisp all sides of tofu cubes. 
- Set aside.
- Assemble the BowlIn a large bowl, add the cooked noodles, cooked edamame, broccoli slaw, shredded purple cabbage, grated carrots, and chopped kale. Drizzle Watcharee's Thai Peanut Sauce over the top and toss to combine.
- Add Tofu and Fresh GarnishesTop the noodle mixture with crispy tofu, microgreens, chopped cilantro, and scallions.
- Finish with a CrunchSprinkle roasted peanuts (or seeds/nuts of your choice) and sesame seeds over the top for extra texture and flavor.
