If you don’t have quick-cooking glass noodles, soak regular glass noodles in room temperature water for at least 30 minutes before cooking.
Add lime juice gradually—use just enough to change the noodles from blue to pink, as too much acid can affect texture and flavor.
For deeper color, simmer the purple cabbage longer to create a more concentrated blue dye.
Rinse the noodles in cold water immediately after cooking to stop the cooking process and keep them springy.
The color is natural and may fade slightly over time; for best results, serve soon after adding the lime.
