When I saw Shishito at our local grocery store, I think it could pair very well with grilled salmon and our sauce. Whether it's a weeknight dinner or a casual weekend treat, I hope you enjoy this healthy recipe with Asian flavor that you can make in no time!
Rinse salmon and pat dry. Mist with oil and sprinkle with salt and pepper.
Wash and pat dry shishito peppers. Mist with oil or mix with oil and set aside.
Add the rest of the vegetables to a mixing bowl and coat with oil. Add salt and pepper to taste.
Heat a cast-iron or grill pan on high heat. Add oil and grill salmon for 4-5 minutes on each side. Once cooked, rest salmon on a rack or plate while cooking vegetables.
Next grill vegetables in the same pan on high heat for 3-5 minutes on each side. Once cooked, remove and set aside.
Add more oil to the grill pan on high heat if needed. Add shishito peppers. Grill on one side until blistered for 1-2 minutes and turn to other side and grill for another minute.
Assemble each rice bowl with grilled salmon and veggies and drizzle with Watcharee’s Thai Sweet Chili & Ginger sauce.
