Grilled Salmon and Vegetables with Thai Sweet Chili & Ginger Sauce

When I saw Shishito at our local grocery store, I think it could pair very well with grilled salmon and our sauce. Whether it's a weeknight dinner or a casual weekend treat, I hope you enjoy this healthy recipe with Asian flavor that you can make in no time!

Ingredients
- Watcharee’s Thai Sweet Chili &
- Ginger 
- 4 salmon filets 
- 1 bunch scallions, cut to 2”

- 1 bell peppers, sliced 
- ½ cauliflower, cut to small florets 
- 16 Shishito peppers 
- 4-6 cups cooked rice 
- Oil

- Salt and pepper

Directions
- Rinse salmon and pat dry. 
- Mist with oil and sprinkle with salt and pepper. 
- Wash and pat dry shishito peppers. 
- Mist with oil or mix with oil and set aside. 
- Add the rest of the vegetables to a mixing bowl and coat with oil. 
- Add salt and pepper to taste. 
- Heat a cast-iron or grill pan on high heat. 
- Add oil and grill salmon for 4-5 minutes on each side. Once cooked, rest salmon on a rack or plate while cooking vegetables.

- Next grill vegetables in the same pan on high heat for 3-5 minutes on each side. Once cooked, remove and set aside. 
- Add more oil to the grill pan on high heat if needed. 
- Add shishito peppers. Grill on one side until blistered for 1-2 minutes and turn to other side and grill for another minute.

- Assemble each rice bowl with grilled salmon and veggies and drizzle with Watcharee’s Thai Sweet Chili &
- Ginger sauce.
