Ingredients

  • 1 jar Watcharee’s Thai Green Curry Sauce
  • 1 lb fish trims or mixed fish medley
  • 4–5 green eggplants, quartered
  • ½ cup bamboo shoots
  • 2–3 stems fresh basil
  • 2–3 red chilies, sliced (optional, for extra heat)

Directions

  1. Add Watcharee’s Thai Green Curry Sauce to a pot over medium heat.
  2. Add the fish trims (or fish medley), green eggplants, and bamboo shoots.
  3. Pour about ¼ cup of water into the empty jar, close the lid, shake well to release any remaining sauce, and add it to the pot.
  4. Simmer for 8–10 minutes, until the fish is just cooked through and the eggplants are tender.
  5. Stir in the red chilies (if using) and fresh basil. Turn off the heat. Serve hot with steamed jasmine rice or brown rice.
