If you've ever visited Thailand, you’ve likely come across a beloved street food: crispy Thai pork toast. These tasty little bites are often seen sizzling in a giant wok filled with hot oil at street food stalls. I’ve reimagined this classic Thai snack by creating a lighter, healthier version—using lean ground turkey and air frying instead of deep frying. The result? Light, crispy toast with none of the greasy aftertaste, perfectly complemented by a beautiful garnish that will impress your guests.

Toast the Bread: Place the quartered bread in the air fryer. Mist both sides with oil, then set the air fryer to 350°F and toast for 2-3 minutes.
Prepare the Turkey Mixture: In a mixing bowl, combine the ground turkey, minced garlic, egg white, soy sauce, oyster sauce, and white pepper. Mix until all ingredients are well incorporated, and the mixture is firm, about 3 minutes.
Make the Egg Wash: In a small bowl, mix the egg yolk with 1-2 tsp of water to create an egg wash.
Assemble the Toast: Use a spoon to spread about 1 tablespoon of the turkey mixture onto each piece of toasted bread.
Add the Egg Wash and Garnish: Brush the top of each piece with the egg wash. Then, garnish with a cilantro leaf and 1–2 pieces of sweet pepper for a pop of color. If desired, sprinkle sesame seeds on top and gently press them down.
Final Toasting: Mist the tops with oil and air fry for 6–8 minutes, depending on the size of the toast and the thickness of the turkey mixture. The toast should be golden and crispy.
