Leftover Turkey Noodles with Coconut Curry Sauce
After Thanksgiving, we love getting creative with our leftover turkey, and one of our favorite twists is to give it an Asian flair. One of our favorites after-Thanksgiving dish is a comforting noodle creation that combines leftover turkey with our rich and flavorful Coconut Curry Sauce. By simmering the turkey with curry sauce, we elevate those holiday leftovers into a heartwarming meal that’s both satisfying and unique. A perfect dish for cold evenings!

Ingredients
- ½ jar Watcharee’s Thai Coconut Curry Sauce
- 1 cup leftover turkey meat
- 1 pack udon or other noodles of your choice
- ½ cup of water
- ½ cup shredded cabbage or other vegetables of your choice
- Cilantro for garnish
Directions
- Pour half a jar of Watcharee’s Thai Coconut Curry sauce in a pot.Â
- (Watcharee loves to use Japanese donabe clay pot to cook on the stove and use the pot as a serving dish.)
- Add noodles and simmer for 5 minutes.
- Add ½ cup of water or more if needed.
- Add cabbage or other vegetables that you have in your fridge.Â
- Cook for another 2-3 minutes.
- Turn off the heat. Garnish with cilantro.Â
- Add dried red chili flakes if you feel like a spicy meal!
