After Thanksgiving, we love getting creative with our leftover turkey, and one of our favorite twists is to give it an Asian flair. One of our favorites after-Thanksgiving dish is a comforting noodle creation that combines leftover turkey with our rich and flavorful Coconut Curry Sauce. By simmering the turkey with curry sauce, we elevate those holiday leftovers into a heartwarming meal that’s both satisfying and unique. A perfect dish for cold evenings!
Pour half a jar of Watcharee’s Thai Coconut Curry sauce in a pot. (Watcharee loves to use Japanese donabe clay pot to cook on the stove and use the pot as a serving dish.)
Add noodles and simmer for 5 minutes.
Add ½ cup of water or more if needed.
Add cabbage or other vegetables that you have in your fridge. Cook for another 2-3 minutes.
Turn off the heat. Garnish with cilantro. Add dried red chili flakes if you feel like a spicy meal!
