Heat sauce in a wok or a large nonstick skillet over medium heat.
Add your choice of protein or tofu.
Simmer until meat is cooked through.
Arrange noodles in serving bowls and add coconut curry sauce.
Serve with crispy egg noodles, fresh shallots, and chili oil and top with a squeeze of fresh lime.
Recipe Note
Traditionally chicken and beef are used in Khao Soi. Meat is cut in chunks and simmered till tender. To save time, we recommend to thinly slice your meat.
Chili oil is available in Asian markets or in the Ethnic/Asian section in supermarkets.
Pickled mustard greens are available in Asian markets and adds sour flavor.
You can substitute crispy egg noodles with crunchy noodles found in most supermarkets, such as La Choy Asian-Style Crunchy Noodles.
If you would like to make your own crispy egg noodles, add oil to a deep pot and bring to medium high heat, add a handful of fresh egg noodles and deep fry for 2-3 minutes until golden brown.
