Growing up in Bangkok, I cherished summers spent in my family’s ancestral home on the beach down south. Together with family and friends, we would dig clams, gather oysters, and chase down crabs. The seafood was plentiful and never fresher! When I moved to Maine, I was thrilled to discover local soft-shell crabs that reminded me of home. These crispy, air-fried, soft-shell crab, served with Watcharee’s Pad Thai or Thai Spicy Chili Sauce, are a healthy and modern take on a Thai classic. Enjoy with a chilled Thai Singha beer or a glass of your favorite Chardonnay.
Prepare breading: In a shallow dish, mix the panko breadcrumbs with the Old Bay Seasoning until well combined.
Prepare egg wash: In a separate bowl, beat the eggs with the water.
Prepare crabs: Clean the soft-shell crabs thoroughly and pat them dry with paper towels.
Bread crabs: Dip crabs in the egg mixture, ensuring they fully coated. Then, dredge crabs in the seasoned panko breadcrumbs, pressing gently to adhere.
Prepare for air frying: Lightly mist each crab with oil on both sides. This will help achieve a crispy finish.
Air fry crabs: Preheat your air fryer to 400°F (200°C). Arrange the crabs in a single layer in the air fryer basket. Air fry for 10-12 minutes or until the crabs are cooked through and golden brown. Cooking time may vary depending on the size of the crabs.
