Ingredients
- 1 cup cooked noodles (rice noodles, lo mein, or ramen work well)
- ¼ cup Watcharee's Thai Peanut Sauce
- 1 tbsp Sichuan chili crunch
- 1 tbsp sesame chili oil (optional, for extra nuttiness)
- 2 tbsp unsalted roasted peanuts, roughly ground or chopped
- 1–2 scallions, thinly sliced (white and green parts separated)
Directions
- Toss the noodles with sesame chili oil and Watcharee’s Thai Peanut Sauce. Mix well until evenly coated.
- Add the sliced scallions and Sichuan chili crunch. Toss lightly to combine.
- Top with crushed roasted peanuts for added crunch. Enjoy!Optional Add-Ins: 
- • A soft-boiled egg, grilled chicken, or tofu for extra protein 
- • Shredded cucumber or pickled veggies for freshness and crunch
