This dish a favorite of many kids in Thailand. Our homestyle Thai sweet and sour sauce with its mild and kid-friendly flavors helps kids to enjoyvegetables. Traditionally, this quick stir-fry uses cucumber, tomatoes, and fresh pineapple chunks with pork or chicken, but you can easily substitute with any veggies you have on hand for a quick stir-fry meal.
Ingredients
 
Watcharee’s Thai Sweet &
Sour Sauce with Pineapple 
8 oz. extra firm tofu, cubed 
 
1 tbs oil 
1 medium cucumber, cut into small chunks 
½ onion, cut into thin wedges 
1 large tomato, sliced into wedges 
 
1 bell pepper, sliced 
 
2-3 scallions cut into 1-inch pieces 
 
½ small red onion, sliced 
1 slice fresh pineapple, cubed or 8 oz. can of pineapple chunks 
¼ cup water or vegetable or chicken stock 
Directions
Heat wok over high heat. 
 
 
Add oil and red onions. Stir fry quickly until the onions become translucent. Add white part of scallions and bell peppers, Stir fry for 1-2 minutes. 
Add tomatoes and pineapple, toss together and add water or stock to soften the vegetables if needed. 
Add tofu and gently stir fry together. 
Add Watcharee’s Sweet &
Sour sauce, green part of scallions and toss together until the sauce coats the tofu and mixs well which takes 3-4 minutes. 
Turn off the heat and serve with rice or noodles.
