Sweet & Sour Stir fry with Tofu and Pineapple
This dish a favorite of many kids in Thailand. Our homestyle Thai sweet and sour sauce with its mild and kid-friendly flavors helps kids to enjoyvegetables. Traditionally, this quick stir-fry uses cucumber, tomatoes, and fresh pineapple chunks with pork or chicken, but you can easily substitute with any veggies you have on hand for a quick stir-fry meal.

Ingredients
- Watcharee’s Thai Sweet &
- Sour Sauce with PineappleÂ
- 8 oz. extra firm tofu, cubedÂ
- 1 tbs oilÂ
- 1 medium cucumber, cut into small chunksÂ
- ½ onion, cut into thin wedgesÂ
- 1 large tomato, sliced into wedgesÂ
- 1 bell pepper, slicedÂ
- 2-3 scallions cut into 1-inch piecesÂ
- ½ small red onion, slicedÂ
- 1 slice fresh pineapple, cubed or 8 oz. can of pineapple chunksÂ
- ¼ cup water or vegetable or chicken stockÂ
Directions
- Heat wok over high heat.Â
- Add oil and red onions. Stir fry quickly until the onions become translucent. Add white part of scallions and bell peppers, Stir fry for 1-2 minutes.Â
- Add tomatoes and pineapple, toss together and add water or stock to soften the vegetables if needed.Â
- Add tofu and gently stir fry together.Â
- Add Watcharee’s Sweet &
- Sour sauce, green part of scallions and toss together until the sauce coats the tofu and mixs well which takes 3-4 minutes.Â
- Turn off the heat and serve with rice or noodles.
