This dish a favorite of many kids in Thailand. Our homestyle Thai sweet and sour sauce with its mild and kid-friendly flavors helps kids to enjoyvegetables. Traditionally, this quick stir-fry uses cucumber, tomatoes, and fresh pineapple chunks with pork or chicken, but you can easily substitute with any veggies you have on hand for a quick stir-fry meal.
Add oil and red onions. Stir fry quickly until the onions become translucent. Add white part of scallions and bell peppers, Stir fry for 1-2 minutes.
Add tomatoes and pineapple, toss together and add water or stock to soften the vegetables if needed.
Add tofu and gently stir fry together.
Add Watcharee’s Sweet & Sour sauce, green part of scallions and toss together until the sauce coats the tofu and mixs well which takes 3-4 minutes. Turn off the heat and serve with rice or noodles.
