Ingredients
2 cups Thai jasmine rice, rinsed
¾ cup coconut milk
8-10 dried butterfly pea flowers (available on Amazon)
3 cups of water
2 ¼ cup butterfly pea water
½ tsp salt
1 tsp sugar
Directions
Butterfly Pea Water
Bring 3 cups of water to a gentle boil.
Add butterfly pea flowers and stir gently.
Turn off the heat and let the flowers steep for 30 minutes.
Rice Cooker Method
Combine the rice, coconut milk, butterfly pea water, salt, and sugar in the rice cooker.
Stir well to combine, then press the cook button. If your rice cooker has a "Jasmine Rice" option, select it.
Once the rice is cooked, fluff it with a fork and close the lid to let it settle before serving.
Stove Top Method
Combine the rice, coconut milk, butterfly pea water, salt, and sugar in a medium pot.
Bring the mixture to a boil, then stir. Cover the pot with a lid and reduce the heat to a simmer.
Cook for about 15 minutes, then remove from the heat and let it steam, covered, for an additional 10 minutes.
Fluff the rice with a rice paddle, close the lid again, and allow the rice to settle before serving.
