Ingredients
- 1 jar Watcharee’s Thai Red Curry Sauce
- ¼ cup water (to rinse the jar and capture every drop of flavor)
- 2 medium chicken breasts, thinly sliced
- ½–1 cup bamboo shoots
- ½–1 cup mushrooms (any variety)
- 2–3 kaffir lime leaves, torn (optional)
- 2–3 stems fresh basil (Thai basil preferred)
- 2–3 red chilies, sliced (optional, for extra heat)
Directions
- Add sliced chicken to a wok or deep pan. Pour in ½ cup of Watcharee’s Thai Red Curry Sauce and heat over medium heat.
- Cook the chicken for 2–3 minutes, then add the remaining curry sauce.
- Pour about ¼ cup of water into the empty jar, close the lid, shake well to release any remaining sauce, and add it to the pan.
- Add mushrooms, bamboo shoots, and kaffir lime leaves (optional). Cook until the chicken is fully cooked through.
- Stir in red chilies (if using) and fresh basil.
- Serve hot with rice of choice.
