Crispy Baked Rice Cups Recipe | Easy Party Appetizers

Ingredients

  • 3-4 cups cooked rice, preferably chilled
  • Neutral cooking oil spray, for lightly misting

Optional Fillings:

  • Tuna mayo with fresh herbs and chili
  • Smoked salmon with cream cheese, cucumber and dill
  • Crispy tofu with Watcharee’s Thai Peanut Sauce
  • Spicy tuna with Watcharee’s Thai Spicy Chili Sauce
  • Sautéed mushrooms with Watcharee’s Thai Basil & Garlic Sauce

Directions

  1. Preheat the oven to 350°F (175°C). Lightly mist a 12-cup nonstick muffin pan with cooking oil.

  2. Divide the cooked rice evenly among the 12 muffin cups.

  3. Using the back of a small spoon, gently press the rice against the bottom and sides of each muffin cup, creating a hollow in the center for the filling. Press firmly to help the rice hold its shape.

  4. Lightly mist the surface of each rice cup with cooking oil.

  5. Bake for approximately 20 minutes, or until the edges are golden and crispy.

  6. Allow the rice cups to cool in the muffin pan for 5–10 minutes before carefully removing them.

  7. Fill with your favorite savory toppings and serve immediately.
