  • 2 salmon fillets (4–6 oz each)
  • 2 cups mixed firm vegetables, such as broccoli, carrots, cauliflower, bell peppers, green beans, or zucchini

Directions

  1. Preheat oven to 400°F (200°C).
  2. Place the salmon fillets in the center of a small baking dish. Arrange the mixed vegetables around the salmon.
