Ingredients
- 1/3 jar Watcharee’s Green Curry Sauce
- 3 boneless chicken thighs, cut into bite-sized pieces
- 4–5 garlic cloves
- 4–5 stems fresh cilantro
- 1 tbsp fish sauce
- 15 bamboo skewers, soak in water
- 1 tbsp neutral oil (optional for grilling)
- Fresh cilantro, lime wedges, and sliced chili for garnish (optional)
Directions
- Pound garlic and cilantro into a rough paste using a mortar and pestle. You can also use your hands to break them into small pieces before pounding. This step is optional but adds extra flavor.
- Combine chicken, garlic-cilantro paste, Watcharee’s Green Curry Sauce, and fish sauce in a bowl. Marinate for at least 30 minutes or up to overnight in the refrigerator.
- Thread chicken onto bamboo skewers like sewing, pushing the chicken pieces tightly against each other, about 2–3 pieces per skewer.
- Brush the skewers with leftover green curry marinade before cooking.
- Mist or lightly brush the chicken skewers with oil.
- Air fry at 400°F for 10–12 minutes, flipping halfway through, or grill over medium-high heat for 8–10 minutes until lightly charred and fully cooked. Brush with additional sauce while grilling if desired. Serve with rice, sticky rice, noodles, and quick pickle.
