Smashed Cucumber Salad with Thai Lemongrass & Chili Sauce

This easy cucumber salad is inspired by Chinese smashed cucumbers but with a Thai twist. It’s fresh, tangy, and has a little kick from Watcharee’s Thai Lemongrass Chili Sauce. The cool crunch of cucumber mixed with the zesty lemongrass makes it super refreshing. It comes together fast and goes great with grilled meats, seafood, or tofu—perfect for a quick side dish or light meal.

Ingredients

  • 1/4 bottle Watcharee’s Thai Lemongrass Chili Sauce
  • 2–3 garlic cloves, minced
  • 1–2 red chilies, roughly chopped (optional, for extra heat)
  • 5–6 cucumbers
  • 1–2 small, sweet peppers (red, orange, or yellow), diced

Directions

  1. Wash the cucumbers and trim the ends. Lightly smash them with the side of a knife or rolling pin until they split, then cut into bite-sized pieces.
  2. Mince the garlic, roughly chop the red chilies (if using), and dice the sweet peppers.
  3. In a large bowl, combine 1/4 bottle of Watcharee’s Thai Lemongrass Chili Sauce with the minced garlic and chopped chilies. Stir well.
  4. Add the smashed cucumbers and diced sweet peppers to the bowl. Toss gently until everything is coated evenly in the dressing.
  5. For more flavor, let the salad sit for 10–15 minutes before serving to allow the cucumbers to soak up the dressing.
  6. Serve chilled or at room temperature. Great on its own or as a side with grilled meat, seafood, or tofu.
