Ingredients
- 1 jar Watcharee’s Thai Green Curry Sauce
- ¼ cup water (to rinse the jar and capture every drop of flavor)
- Cooked noodles of your choice (rice noodles or egg noodles)
- 1 lb chicken, thinly sliced
- 4–5 Thai green eggplants, quartered
- ½ - 1 cup bamboo shoots
- 2–3 stems fresh basil (Thai basil preferred)
- 2–3 red chilies, sliced (optional, for extra heat)
Directions
- Add ½ cup of Watcharee’s Thai Green Curry Sauce to a pot over medium heat.
- Add sliced chicken and cook for 2–3 minutes.
- Pour about ¼ cup of water into the empty jar, close the lid, shake well to release any remaining sauce, and add it to the pot.
- Simmer for 5 minutes.
- Add green eggplants and bamboo shoots, and cook until the chicken is fully cooked through.
- Stir in red chilies (if using) and fresh basil.
- Serve hot with cooked noodles of your choice.
