Looking for a quick and easy meal for a busy weeknight or a chill weekend? This Thai Peanut Chicken Rice Bowl is one of my go-to meals when I want something simple but full of flavor. Juicy seared chicken thighs are coated in creamy Watcharee’s Thai Peanut Sauce and ready to enjoy in about 30 minutes.


I like to serve it over warm jasmine rice with pickled vegetables for a little tang and crunch. But don’t worry if you don’t have them just add whatever fresh vegetables you have in your fridge. Simple, flavorful, and easy to make your own.

Thai Peanut Chicken Rice Bowl: An Easy Weeknight Dinner

Ingredients

  • ½ jar Watcharee’s Thai Peanut Sauce

  • 4-6 boneless, skinless chicken thighs

  • 2 tbsp cooking oil

  • Salt and black pepper, to taste

  • Cooked jasmine rice, for serving

  • Pickled vegetables, for serving

  • 1 tbsp sesame seeds

  • Fresh cilantro, for garnish (optional)

  • For the pickled vegetables: Serve with your favorite quick-pickled vegetables or fresh vegetables you have on hand.

Directions

  1. Pat the chicken thighs dry with paper towels. Season both sides with salt and black pepper.

  2. Add the oil to a large skillet and heat over medium heat.

  3. Add the chicken thighs and cook without moving them for about 5 minutes, or until nicely golden brown.

  4. Flip the chicken and cook for another 5 minutes, or until cooked through and the juices run clear when pierced.

  5. Transfer the chicken to a plate. Carefully pour out the excess fat and oil from the skillet.

  6. Reduce the heat to medium-low. Add ½ jar Watcharee’s Thai Peanut Sauce to the skillet and heat gently for about 1–2 minutes, stirring occasionally.

  7. Return the seared chicken thighs to the skillet. Turn them until evenly coated with the Peanut Sauce.

  8. Transfer the chicken to a cutting board and let it rest for about 1-2 minutes. Slice into strips.

  9. Add warm jasmine rice to each bowl and top with the sliced chicken. Serve with pickled vegetables or your favorite fresh vegetables.

  10. Sprinkle with sesame seeds and fresh cilantro, if using. Spoon a little extra warm Peanut Sauce over the chicken and rice before serving.
