Ingredients

  • ½ cup Watcharee’s Thai Sweet Chili &Ginger Sauce
  • 1 block tofu or flavored tofu (such as Sriracha or five spice), seared or air-fried.
  • Lettuce leaves, separated and washed
  • 3 cups cooked glass noodles
  • 4 -5 stems fresh cilantro
  • 4 -5 stems fresh culantro (optional)
  • 4 - 5 sprigs fresh mint, leaves picked
  • Crispy shallots (optional, for garnish)

Directions

  1. Prepare glass noodles according to package instructions, or make naturally colorful noodles in pink or blue using this recipe
  2. Sear or air-fry tofu (or flavored tofu) until golden and lightly crispy.
  3. Arrange lettuce leaves on a serving platter.
  4. Fill each lettuce leaf with glass noodles and tofu.
  5. Top with cilantro, fresh mint, and crispy shallots if using.
  6. Drizzle with Watcharee’s Thai Sweet Chili &Ginger Sauce just before serving.
