Vietnamese-Inspired Summer Rolls with Watcharee's Thai Peanut Sauce

Ingredients
- ¾ cup Watcharee's Thai Peanut Sauce, for dipping
- 10 round rice paper wrappers (bánh tráng), 8.5-inch diameter
- 10 sheets dried bánh hỏi (Vietnamese woven rice vermicelli noodles), soaked in hot water for 7 minutes, drained and cooled
- 5 medium cooked shrimp, sliced in half lengthwise
- 1 small head lettuce, leaves separated
- Edible flowers, optional
- 1 cup microgreens
- 2 cups shredded carrots
- 2 cups garbanzo sprouts
- 4–5 fresh basil sprigs
- 4–5 fresh mint sprigs
- 5 culantro leaves, optional
- 5 garlic chives, optional
- Crushed peanuts
- Extra edible flowers for serving
Directions
- Lay a sheet of rice paper wrapper on a clean, flat surface. Lightly sprinkle both sides with water and let stand for 30–60 seconds, or until softened and pliable.
- Place a few edible flowers on the lower third of the wrapper for a beautiful presentation. Top with a lettuce leaf, one sheet of softened bánh hỏi, microgreens, shredded carrots, basil, mint, and culantro.
- Arrange 2 shrimp halves on top of the vegetables, cut side facing down.
- Fold the bottom edge of the wrapper over the filling and begin rolling away from yourself. Fold both sides inward to enclose the filling.
- Place a garlic chive along the roll and continue rolling tightly until completely sealed.
- Repeat with the remaining wrappers and filling ingredients.
- Arrange the summer rolls on a serving platter. Serve with Watcharee's Thai Peanut Sauce and garnish the sauce with crushed peanuts for extra texture and flavor.
