Bring a rainbow of colors to your dinner table with this quick and easy Thai Green Curry! Tender chicken, colorful rainbow carrots, and edamame simmer in Watcharee’s rich, aromatic Thai Green Curry Sauce for a delicious meal in just 15 minutes.

Perfect for a busy weeknight or a lazy weekend, this colorful curry is delicious served with steamed Thai jasmine rice. For a plant-based option, simply substitute chicken with tofu or your favorite beans.

Ingredients

  • 1 jar Watcharee’s Thai Green Curry Sauce (9.8 fl oz)
  • 1 lb boneless chicken (thigh or breast), thinly sliced
  • 3–4 rainbow carrots, thinly sliced diagonally
  • ¼ cup shelled edamame, fresh or frozen
  • 3–4 fresh Thai chilies (optional)

For Serving

  • Steamed Thai jasmine rice

Directions

  1. Open the jar and remove the lid. Microwave the sauce in the jar for 1 minute if needed to make it easier to pour.

  2. Pour Watcharee’s Thai Green Curry Sauce into a pot or wok over medium heat.

  3. Add sliced chicken and rainbow carrots. Stir gently.

  4. Add ¼ cup water to the empty sauce jar, close the lid, shake well, and pour into the pot to capture all the goodness.

  5. Cover and simmer for 8–10 minutes, stirring occasionally, until the chicken is fully cooked (165°F) and carrots are tender.

  6. Add edamame and fresh chilies during the last 2–3 minutes of cooking. Stir until heated through.

  7. Serve hot with steamed Thai jasmine rice. Enjoy!
