- Watcharee’s Thai Red Curry Sauce
- 1- 1½ cup water or broth
- 1- 1½ tbsp fish sauce
- ½ - 1 tbsp coconut sugar
- 1 pack instant noodles
- 8-10 frozen dumplings (any type — chicken, veggie, pork, shrimp)
- A handful of spinach or any quick-cooking vegetables you have on hand
- Optional toppings: chopped green onions, chili flakes, lime wedge
Directions
- In a medium pot, heat a small spoon of oil over medium heat and add the Thai red curry sauce. Stir for about 30 seconds, just until fragrant.
- Pour in the coconut milk and water (or broth) and stir until the curry sauce is fully dissolved into a smooth sauce.
- Add the noodles and frozen dumplings directly into the pot — no need to thaw or pre-cook. Simmer gently for about 5–7 minutes, stirring occasionally, until the noodles are soft and the dumplings are cooked through.
- During the last minute of cooking, toss in a handful of spinach or any quick-cooking vegetables you have on hand. They’ll wilt perfectly into the sauce. If it thickens too much, add a splash of water or coconut milk to loosen it.
- Stir in the fish sauce and coconut sugar, then taste and adjust — add more fish sauce for saltiness or a touch more sugar to balance the spice.
