Ingredients

  • Watcharee’s Thai Red Curry Sauce
  • 1- 1½ cup water or broth
  • 1- 1½ tbsp fish sauce
  • ½ - 1 tbsp coconut sugar
  • 1 pack instant noodles
  • 8-10 frozen dumplings (any type — chicken, veggie, pork, shrimp)
  • A handful of spinach or any quick-cooking vegetables you have on hand
  • Optional toppings: chopped green onions, chili flakes, lime wedge

Directions

  1. In a medium pot, heat a small spoon of oil over medium heat and add the Thai red curry sauce. Stir for about 30 seconds, just until fragrant.
  2. Pour in the coconut milk and water (or broth) and stir until the curry sauce is fully dissolved into a smooth sauce.
  3. Add the noodles and frozen dumplings directly into the pot — no need to thaw or pre-cook. Simmer gently for about 5–7 minutes, stirring occasionally, until the noodles are soft and the dumplings are cooked through.
  4. During the last minute of cooking, toss in a handful of spinach or any quick-cooking vegetables you have on hand. They’ll wilt perfectly into the sauce. If it thickens too much, add a splash of water or coconut milk to loosen it.
  5. Stir in the fish sauce and coconut sugar, then taste and adjust — add more fish sauce for saltiness or a touch more sugar to balance the spice.
  6. Serve immediately, topped with chili flakes, green onions, or a squeeze of lime. Creamy, spicy, and full of Thai flavor — all in one pot. 🌶️🍜
